Recipe: Oven style hangi – Serves 6
Ingredients:
1 tbsp oil
2 cloves garlic, crushed
3 tsp smoked paprika
3 tsp dried mixed herbs
2 medium carrots, cut into chunks
1 medium potato, cut into chunks
1x onion, finely diced 6 chicken thigh pieces
6 large cabbage leaves
Garnish with ½ cup fresh herbs or spinach (optional)
Method:
1. Heat oven to 180 Celsius
2. Mix the oil, vegetables, chicken, herbs and spices in a large bowl, and set aside
3. Bring a pot of water to boil, add the cabbage leaves to the water and remove when they begin to soften (2-3 minutes approximately)
4. Lay out the cabbage leaves in a baking dish and divide the ingredients between the leaves.
5. Roll the leaves up so all the ingredients are inside
6. Pour ½ cup water into the baking dish
7. Cover the dish with tin foil and bake for 2 hours or until cooked
8. Serve with fresh herbs of spinach, if available
